- 1 egg
- 1 c. lemon yogurt (divided)
- 1/2 c. skim milk
- 2 T. oil
- 1 t. lemon juice (I use closer to a Tablespoon)
- 1 c. flour (I use 1/2 white, 1/2 wheat)
- 2 T. sugar (or splenda)
- 1 t. baking powder
- 1/2 t. baking soda
- 1/2 t. salt
- 1 1/4 c. blueberries (divided)
Mix together egg, 1/2 c. yogurt, milk, oil, and lemon juice. Stir in flour, sugar, b. powder, b. soda, and salt. Stir in 1 c. blueberries. Cook pancakes on griddle. Top with remaining yogurt and blueberries!
