Blueberry Brunch Bake

I have lots of yummy recipes that use blueberries, but this is one of my favorites. It's a nice twist on breakfast casserole. I like to make it when we have company b/c it's easy to put together the night before and throw in the oven in the morning..
  • 1 loaf of french bread, cubed
  • 1 1/2 c. blueberries
  • 12 oz. cream cheese, softened
  • 8 eggs
  • 1/2 c. plain yogurt (I use vanilla)
  • 1/2 c. sour cream
  • 1 t. vanilla
  • 1/2 t. cinnamon
  • 1/2 c. milk
  • 1/3 c. maple syrup
  • additional blueberries & syrup

Place 1/2 of bread cubes in 9x13 baking dish. Sprinkle w/ blueberries. In a mixing bowl, combine all other ingredients and mix well. Pour 1/2 over mixture. Top w/ remaining bread cubes and pour the rest of the cheese mixture over the top. Refrigerate overnight. Remove from fridge 30 minutes prior to baking. Cover and bake at 350 for 30 minutes. Remove cover and bake an additional 20-25 minutes until knife inserted in middle comes out clean. Sprinkle w/ additional blueberries if desired. Serve w/ syrup and blueberries. YUMMY!
